Lonely dinner advice (random thread)

Okay, I am stuck last minute having to do dinner alone. I really wasn't in the mood to be alone tonight. I tried to convince AE to at least spend some time with me this afternoon, but he had errands to do. I really don't feel like going out to eat alone - and I'm not much in the mood for ordering pizza either. Does anyone have any good solo-dinner suggestions?

Breakfast for dinner always cheers me up iff'n I gotsta be alone. Waffles with peanut butter and syrup or maybe an omelet or egg sammich.

Both of those sound really good. How gross is it to combine breakfast and mac 'n cheese??? :eyepop:

Dinner alone is the perfect opportunity to satiate the garlic cravings :)

Tandori chicken massala .......... huge garlic naan bread and a multitude of onion bhaji's will do it for me everytime :)

Ok, that may seem like a lot of cooking for one.......

Hmmm...That puts me in the mind of making one of my peanut butter pies, drizzled in caramel and peanuts - YUM! :swing:

Green peppers and onions simmered in olive oil until the onions are clear and the peppers are cooked - then turn the heat up to high, and as soon as it starts sizzling, pour in four or six eggs scrambled and turn the heat down to medium and cook it like an omelet. Peppers and eggs sandwich, on toast! Yum. :D

one of those small containers of BlueBell's chocolate chip cookie dough always puts me in a better mood.....that is, until I realized I ate the entire thing in one sitting....

Haha! BlueBell pints - you can't stop until it's all gone!

Banana Cream Pie
Rocky Road
Banana Split
Mint Chocolate Chip

yumyum

SB - I usually do pasta dishes when I don't feel like cooking much. Just some penne with ariabiata sauce or (my current fave) roast butternut tortellini with a three cheeses sauce (I like using at least one strongish cheese like a mature cheddar to lift the sauce a bit and I add fresh chives to it), toss a little green salad, add some good wine & there ye go. A quick spaghetti bolognese is always nice too.

But some nice curry (I love Chicken Tikka these days) some some BIG garlic naan.............hmmmm yummie

This is of course for next time when you don't feel like cooking much because you're home alone :D
